Buffalo Wings and French Fries

Scenario: You’re invited to a friend’s house for a party. You put on your best outfit, and head out to be the social butterfly that you are. You get there, start to chat with your friends, maybe have a sensible glass of vino, and then you head over to the food table.

Right in front of you, laid out in perfect design, is every food you’ve ever craved. Every food you were told was BAD…Every food you’ve wanted to order at the diner (probably after a long night of drinking at 4am.)…Every food that…that…that…..

AHHHHHH!!!!!!!

Ok…now calm down. It’s going to be ok I promise. The truth is… you can eat anything you want!!! Yep.. you can… you just have to figure out healthy ways to create those dishes!

Ever hear of “Eat this, Not that?”

For todays Indulgences: Buffalo Wings and French Fries:

DONT EAT THIS!!!:

Buffalo Winged Cauliflower

  • 1/2 head cauliflower
  • 1/4 Franks Red Hot Buffalo Wing  Sauce
  • garlic powder
  • pepper
  • 1 tsp vegan earth balance butter (or butter of choice)

Dipping Sauce

  • 1/4 avocado
  • 2 tbs greek yogurt (I used So Delicious brand)

Melt butter. Mix with hot sauce. Toss cauliflower with hot sauce mixture. Sprinkle on seasonings. Spray a banking pan with cooking spray and bake at 450 degrees (depending on your oven) for about 25 minutes (keep an eye on them… take them out when they start to brown!)

Mix the ingredients for the sauce, (its super creamy and light… cuts the spicy “wing” nicely)

Veggie “Fries”

  • Butternut Squash, Jerusalem Artichokes (You can also use carrots, parsnip, turnip etc
  • Spices of your choice (Salt, Pepper, Rosemary, Thyme, Garlic Powder, etc)

*Jerusalem artichokes taste just like potatoes, but aren’t starchy. They also have a much  lower glycemic index!!

Slice veggies super thin and lay them on baking sheet. Spray the sheet AND the veggies with cooking spray, season and Bake at 425 degrees for about 20 minutes. Flip, and cook for another 15 minutes.  (again, keep an eye out, every oven is different!)

So it’s true, you can eat those crave worthy treats, just make some smart choices! I mean common, who doesn’t love to cheat the system!

ENJOY 🙂
