Branch out Breakfast part 2!

So, as I said in my earlier post, breakfast is my favorite meal of the day. Every morning I wake up and look forward to the deliciousness that will be the first meal of my day! Since I am a creature of habit, I tended to eat the same thing every morning. It was usually some sort of oatmeal. Lately, I have been “branching out” and trying all sorts of yummy grains.  Yesterday, I experimented with this stuff :

I have never tried Gluten free Rice and Shine. While I was making it, I wasn’t sure I would like it. I couldn’t tell if I would like the consistency since the photo looks a bit mushy on the box. BOY WAS I WRONG!

I LOVED IT

What did I LOVE so much about Rice and Shine?

Well, to start out, it is gluten-free. It’s (surprise surprise) gluten free, really low in fat, and relatively high in protein. The best part was a simple 1/4 cup of this cereal expanded to a huge bowl! I love big breakfasts and I was really happy that one portion was so filling. It also absorbed all of the flavors I added to it which made for a delicious meal 🙂

“Reeses” Rice and Shine

  • 1/4 cup Rice and Sine Cereal
  • 1 1/2 TBS cacao powder
  • 1 tsp chia seeds
  • 1/2 TBS Nut Butter of choice
  • 1/4 cup blueberries
  • 1/2 banana
  • 1/2 cup water
  • 1/4 cup brewed coffee
  • pinch of salt
  • stevia
  • optional: Shredded coconut flakes, 1 TBS chocolate chips

Instructions:

In a pan, bring water to a boil. Add rice and shine cereal, chia seeds, salt  and stevia. Allow to cook for about 7 minutes or until cereal has absorbed most of the water. Add brewed coffee.  Allow to absorb. Once cereal is totally cooked, add nut butter, cocoa/cacao powder, fruit and optional ingredients. Mix completely.

Like I said, the cereal really took on the flavors I added. It was rich in chocolate and the sunflower seed butter really came through. I was so pleasantly surprised!

Run down

The past ten days have been incredibly intense for me. We learned an entire broadway show in just TEN days!!! That is ridiculously fast.

I haven’t mentioned my role in the show. I am what we call a “swing”. My job is to know every female track in the show, and be able to go on at any moment. I go on if someone is sick, injured, has a personal day, is on vacation, etc. Our show has 9 female ensemble members and I am responsible for them all! It truly is the most difficult job I have ever had. It is also really stressful.

I think everything is catching up to me, because when I came home from work today I felt really run down. The instant I start to feel a tickle in my throat I turn to this smoothie. It sounds a little funny to some people, but I promise it tastes delicious. It will help to boost your immune system and kick that cold before it even has a chance to take over your body!!

Before I share the recipe, I need to introduce you to my number one immune booster:

Immune Boost Super Smoothie

  • 1 banana (frozen or fresh)
  • Frozen strawberries (about 3/4 cup)
  • 1 cup spinach
  • 1 cup kale
  • 1 tsp Spirulina
  • 3 packets stevia (more or less depending on how sweet you want it)
  • 1 tsp vanilla
  • 2 tbs cacao Powder ***(or regular cocoa powder)
  • 1 tsp chia seeds
  • 4 ice cubes
  • 1 tbs cooked quinoa (optional. add if you have some already made!)

***Cacao powder is also a super food. It is the powdered form of raw chocolate 🙂

Blend all ingredients and enjoy!!!

I know that the idea of spinach and kale in a smoothie can be intimidating. I also know that the green color freaks some people out. I promise you can’t taste it, and it is a great way to get an added dose of greens!

Frozen Chocolate Cheesecake Bites

First, I want to apologize if you follow me and got a million emails saying I updated a post. For some reason WordPress is being tricky tonight!

I thought about coming up with a clever title for this post, but then I decided that the feature recipe would speak for itself.

Sometimes, the only thing that will make me happy is something sweet. I’m not talkin’ “fruit” kinda sweet. I’m talkin fudgey, chocolatey, melt in your mouth, makes your heart soar with every bite kinda sweet. Sound over the top? Perhaps, but you KNOW you have had that feeling.

Yesterday, I experienced just this! I needed desert, and I needed it immediately!!! I cruised over to my favorite blog, Chocolate Covered Katie, and knew I would find exactly what I needed. I settled on Brownie Batter Dip! Being the control freak that I am, decided to make it with less fat, calories, and make it portion controlled. I then had the BRILLIANT idea to freeze my concoction and enjoy it later as an icy treat! What did I come up with? Something that tastes like Chocolate Fudge, and curiously resembles the texture of Cheesecake.

THEN IT HAPPENED

The Frozen Chocolate Cheesecake Bite was born. The outcome of my concoction was a cold fudge like morsel that reminded me a lot of cheesecake… and it was MARVELOUS!

Frozen Chocolate Cheesecake Bites

(Makes 6 servings….or 3….if you REALLY want!)

  • 1/3 cup Black Beans
  • 2 tbs cocoa powder
  • 1/2 banana
  • 1 tbs Nut butter of choice
  • 1 tbs coconut flour (any flour should work)
  • 1 dove dark chocolate square (Or 1 tbs chocolate chips)
  • 1/8 tsp salt
  • stevia (I used 2 packets)

Melt Chocolate square (or chips) in a cup until soft (about 15 seconds). Combine ALL ingredients (including square) and blend until smooth. Transfer mixture into an ice tray (Should fill 6 cubes). Freeze for a couple of hours until hardened, or over night. Enjoy!!!!

I chopped these up and used them as a topping for a strawberry shake!!!

Strawberry Shake

  • 1 and 1/2 -2 frozen banana
  • handful of frozen strawberries (I don’t measure fresh fruit and veggies… maybe 1 cup?)
  • 1/4 cup milk of choice
  • Stevia
  • 1 tps vanilla
  • 4 ice cubes
  • OPTIONAL: 1/2 cup greek yogurt

Blend all ingredients and ENJOY!

I will admit, the Cheesecake bites melted a bit when I mixed them into the shake. I enjoy them better by themselves.. but feel free to experiment!!!

Ice cream… all day EVERY DAY

Happy MONDAY!!!!

This weekend, Keith’s uncle and cousin were in town. I love having visitors! It gives us an excuse to go out into the city and play tour guide. We did some “touristy” things that we normally never do… and they were so much fun!

We went to Chelsea Market:

Chelsea Market is an awesome place that has tons of different foods, vendors, and shops. We didn’t eat there, but just walking through the building is exciting! There are lots of people, and tons of things going on.

And the Beautiful High Line Park:

The high line is an old freight train rail that they converted into a gorgeous public space. It runs for something like 50 blocks (all elevated) and they have lots of art, food, music and events. Also, one of my favorite parks!

Ok now onto the ICE CREAM!!!

I love having cold healthy ice creams. They are great at any time of the year, during any part of the day. I really could eat ice cream all day every day!!! Here are some ice creams that I have been enjoying lately..

  • Frozen Mango (  I don’t measure but I’m guessing about 1 cup)
  • 1 Frozen banana
  • 1 tsp Chia
  • 1 tbs goji Berries
  • 4 tbs pomegranate seeds
  • 1 tbs shredded coconut
  • Sweetener of choice (I used 2 stevia packets)
  • 1/2 tsp vanilla extract
  • Optional: 1/2 tsp coconut extract

Blend Mango, banana, chia, 1/2 tbs goji, 2 tbs pomegranate seeds until creamy (if you need add some water or your choice of milk to get things going). Transfer to bowl, and top with remaining goji, pomegranate, and coconut. ENJOY!

image-56Coco Acai Protein Ice Cream

  • 1 Unsweetened Acai Smoothie packet (you can get these at Whole Foods or any natural food store)
  • frozen cherries (I don’t measure, but I think 1/2 cup)
  • 1 tbs coco powder
  • 1/2 tsp chia seeds
  • 1 scoop protein powder (I used Chocolate)
  • 1/2 tbs cacao nibs
  • 1/2 tsp vanilla extract
  • 2 stevia packets
  • 3 tbs cold coffee (or liquid)

Combine all ingredients except cacao in a blender. Top with cacao, and ENJOY!

Secret Mint Chocolate Chip Ice Cream

  • 1- 1 1/2 frozen banana
  • 1/2 cup frozen kale or spinach (secret ingredient!!!)
  • 1/2 tsp vanilla extract
  • 1/2 tsp chia seeds
  • 2 stevia packets
  • 1 tsp peppermint extract (I like it minty… you can always add more…)
  • 1 Dove Dark Chocolate square
  • 1/2 tbs cacao nibs

Combine all ingredients except chocolate and cacao in a blender. Blend until smooth (make sure greens are completely broken down!) Transfer to bowl. Using kitchen shears, cut chocolate square into shreds. Top ice cream with cacao nibs and shredded chocolate. ENJOY!!!!

I love this ice cream because it is a great way to get some added greens!
